Fun with baking

Friends, my shiny new Kitchenaid mixer is sitting on the counter, beckoning to me.

“Erin,” it’s saying, “make something.”

I just don’t know what to make! I’m itching to bake, but I’m not craving anything in particular. And so I turn to you, dear readers…share with me a suggestion, a favorite recipe, whatever, and help me break in my new mixer!

    Make something like cupcakes, something you’ve made lots of times before, and notice the huge difference in the finished product.

    BTW: Here’s my biscuit recipe. Don’t overmix 😉

    Buttermilk Biscuits

    3 c flour
    4 t baking powder
    1 T sugar
    1 t salt
    ¾ t cream of tartar
    ¾ c butter, chopped
    1 ¼ c buttermilk (or 1 c milk)

    Mix everything but buttermilk. Make a crater in the mixture. Add buttermilk all at once. Stir until just moistened. Do not overstir.

    Form biscuits. The less handling of the dough, the better (overhandling makes tough biscuits). I just make a lump on the floured surface and press it out with my fingertips until it’s a nice thickness, about two fingers high.

    Bake biscuits at 450 for 10-12 minutes, until golden.

    For a variation, add 1/4 c whipping or heavy cream and make drop biscuits instead of formed biscuits.

  2. first make something that is already super easy…like boxed brownies and be blown away at how it almost makes you want to never cook with boxed goods again…the KA makes it all too easy….

    then next try making bread and not having to knead….

    then try some ridiculously tough looking cake or something – ala Martha Stewart baking book and be so happy to have such an awesome tool at your disposal.
