Many thanks to Chris and Missy, who hosted a lovely get-together on New Year’s Eve, and to Jen and Mark, who hosted a lovely New Year’s Day brunch. Ringing in the new year with friends is always nice! 🙂
I brought a cheesecake to each of the gatherings:
I made the recipe that my mom’s been making for as long as I can remember.
8 oz cream cheese
1/2 c. sugar
1 Tbsp. lemon juice
1/2 tsp vanilla
dash salt
2 eggs
Beat, pour into graham cracker crust, Bake 25-30 minutes at 350.
Topping:
1 c. sour cream
2 Tbsp sugar
1/2 tsp vanilla
Beat ingredients, pour and spread over top of cheesecake, bake an additional ten minutes.
Mom usually uses pre-made graham cracker crusts. It’s easy to modify the recipe for a springform pan, though…just make a graham cracker crust, multiply all of the ingredients by 1.5, and adjust the baking time a bit. I’d have done this, but I don’t have a springform pan. 😉
I bought frozen raspberries for the topping. Yum. 🙂
