New haircut and other stuff (with photos!)

I got my hair cut today. Since I was no longer worried about what my hair would look like for the wedding, I let my stylist basically do whatever he wanted.  Here’s the side view:

He took A LOT of hair. I like it. What do you think?

Makin’ cupcakes

So, for my maiden voyage with the new KitchenAid mixer (pictured above!), I decided to make some cupcakes.

Rachel and Brian gave us this cool cupcake pan/carrier:

It’s from Crate & Barrel. They also included a box of cupcake and frosting mix, but I opted to try something from scratch. Also in their package, this fun book:

I found several recipes I wanted to try, but opted for the one that included the fewest amount of ingredients I did not have in the house: Devil’s Food Cupcakes. All I needed was milk, which I was able to pick up at the gas station on the corner. Instead of making the frosting that was suggested with the cupcake recipe, I made a fudge frosting from the previous page…it involved heating butter, milk, and chocolate (I used chocolate chips) on the stove, then mixing in confectioner’s sugar.

The mixer is every bit as awesome as everyone says. 🙂

I used the carrier to bring the cupcakes to Fuji Grill, where we were meeting Ron, Melissa, and several of Melissa’s friends and family for a birthday gathering. They were a hit.

Personally, I liked the cupcakes just fine, but I disagree with their classification as “devil’s food.” I’d have called them chocolate. Anyone have a good devil’s food cake recipe to share with me?

This recipe, for reference:

2 c. self-rising flour
1 tsp. baking powder
1 c. light brown sugar
1 c. (2 sticks) sweet butter, softened
2 separated eggs
3 1/2 oz. semisweet chocolate, melted
1 tsp. vanilla extract
1/2 c. milk

Sift flour/baking powder and set aside. Cream sugar and butter in medium bowl. Add egg yolks and beat well. Add melted chocolate and vanilla, mixing well. Add flour and milk alternately, beating well with each addition. Beat egg whites in a medium bowl until soft peaks form, and gently fold into batter.

Bake at 350 for 20 minutes

Fun with baking

Friends, my shiny new Kitchenaid mixer is sitting on the counter, beckoning to me.

“Erin,” it’s saying, “make something.”

I just don’t know what to make! I’m itching to bake, but I’m not craving anything in particular. And so I turn to you, dear readers…share with me a suggestion, a favorite recipe, whatever, and help me break in my new mixer!

I made cupcakes yesterday, just because. They’re devil’s food with homemade cream cheese frosting (colored pink) and finished with a cinnamon imperial heart in the middle. I sent them to work with Rand.

Over the weekend, I received my blogging-by-mail package from Audrey at Rouge Tomate.

It’s just full of tasty treats! I still haven’t opened the VERY yummy looking chocolate with dried cranberries. Mmmm… I also got a selection of Coffee Crisp bars, tea, maple caramel (sounds tasty!), some Les Citrons candies and Hoisin sauce. Audrey also included a recipe for sour cream coffee cake that looks fantastic. Thanks, Audrey!

Michelle at Our Full House received the package I sent her, which I had lots of fun putting together! I got all ambitious and made cupcakes. I was worried about mailing them, but I guess they made it there okay!

Busy day

I was way past due for an eyebrow wax, so I called Chez Ann this morning…I like them because they use the “sugaring” technique. I don’t know what the technical difference is, but I can tell you that it’s much less irritating than wax.

Then I went to Wegman’s to pick up a few necessities, and I just had to grab a couple of these resuable shopping bags.

I would so love to have an herb garden. I can’t really do it right now, but I did pick up one of these little basil plants (2 for $5!). Mmmm…fresh basil. It’s on the kitchen windowsill, and it’ll need a proper pot.

Finally, I made brownies. These were box brownies, but I added chopped pecans and caramel topping. Voila! Turtle brownies.

This afternoon, I’ve been enjoying music from Pandora, grading papers, and doing laundry. Ooh, excitement! Hope you’re all having a lovely day. 🙂

Busy weekend

Whew! Lots going on this weekend. I saw two movies–Pan’s Labyrinth and Babel. I’ll probably post more thoughts on these later. I will say that, while I liked Babel, I don’t think it was any great injustice that it didn’t win Best Picture. Both movies were dark, but I thought Pan’s Labyrinth was slightly more hopeful and uplifting. I cried during Pan’s Labyrinth and didn’t during Babel, which is not to say that there were not sad, heartwrenching moments during that movie.

Anyway.

I made Eden’s peanut butter swirl brownies, and for my first attempt at brownies from scratch, I have to say not half bad. I think my pan was an 8×8 rather than 9×9, which made them a little thicker than I would have liked, but they were okay.

Sunday was our book club meeting. None of us hated the book as violently as Eden did, but we all basically agreed about the book’s problems. It seemed to me that Coupland couldn’t decide which story he wanted to tell, which resulted in a jumbled, chaotic story with too many loose threads left untied. I’m not sure the four-narrator thing worked so well, because the characters weren’t given distinct enough voices.

The book was very readable…I got through it in a day…but I just kept waiting for something to happen, particularly in Heather’s story. There were moments when I thought I saw where Coupland wanted to go, but I don’t think it quite got there. I think the father/son dynamic should have been more at the heart of the story than it was. I think Hey Nostradamus wanted to be a story about faith and redemption and family, but fell a little bit short.

I did mark a lot of passages that I thought were memorable–this one in particular:

Redemption exists, but only for others. I believe, and yet I lack faith. I tried building a private world free of hypocrisy, but all I ended up with was a sour little bubble as insular and exclusive as my father’s.

And this one:

Sometimes I think God is like weather–you may not like the weather, but it has nothing to do with you. You just happen to be there. Deal with it.

I didn’t love it, which was disappointing, given how much I enjoyed Girlfriend in a Coma and All Families are Psychotic. But I didn’t completely hate it either. I doubt I’ll ever want to read it again, and I definitely wouldn’t recommend it to anyone who hasn’t read any other Coupland.

So I have this jar of Wegmans brand creamy peanut butter just sitting around. (I broke down and bought Jif, by the way. It’s okay, but it’s not Peter Pan…)

I didn’t really like the Wegmans stuff. It’s too creamy. And a little too sweet. But I decided it would be reasonable for baking.

I thought about making regular peanut butter cookies, but then I thought, hmmm…peanut butter chocolate chip cookies would be even better!

So I was off to find a recipe…I decided this one would do. They’re pretty good…the first time, I missed the bit where I’m supposed to let them cool for 4 minutes on the baking sheet before attempting to move them. Oops. I broke a couple in the process, and I was worried that they were going to be a big waste of time and effort. Not so!

Despite the fact that I used more peanut butter than the recipe called for, I still don’t think they’re quite peanut-buttery enough.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup (2 sticks) butter or margarine, softened
  • 1/2 cup creamy or chunky peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 3/4 cups (11.5-oz. pkg.) NESTLÉ® TOLL HOUSE® Milk Chocolate Morsels
  • 1 small amount of granulated sugar

Directions:
PREHEAT oven to 375° F.

COMBINE flour and baking soda in small bowl. Beat butter, peanut butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Beat in egg. Gradually beat in flour mixture. Stir in morsels.

DROP dough by rounded tablespoon onto ungreased baking sheets. Press down slightly with bottom of glass dipped in granulated sugar.

BAKE for 8 to 10 minutes or until edges are set but centers are still soft. Cool on baking sheets for 4 minutes; remove to wire racks to cool completely.

PAN COOKIE VARIATION:

PREPARE dough as above. Spread dough into ungreased 15 x 10-inch jelly-roll pan. Bake for 15 to 18 minutes. Cool in pan on wire rack.

After I get more chips, I’m going to have to try Eden’s peanut butter swirl brownies. Mmmmm.
